Japanese carbon steel (Hitachi Aogami Blue Paper Steel No.2). The HRC 62-64
hardened blade is incredibly sharp and long-lasting, allowing you to shave
silky-smooth fresh bonito flakes without destroying the bonito fibers. Also,
the blade steel is laminated with soft iron by skilled Japanese blacksmiths,
and it makes the blade stronger and easier to sharpen than a mono steel blade.

Heavy Duty Body The body weight is 44 oz. and moderately heavy, making it
